Cream Cheese Strawberry Cupcakes

Made these for friends at work. Technically not cakes I know, but they were fun to create.





I used THIS recipe and added fresh diced strawberries.

INGREDIENTS:
1/2 (8 ounce) package cream cheese,
softened
1/4 cup white sugar
1/2 teaspoon lemon zest
1/8 teaspoon vanilla extract
2 eggs
3/4 cup milk
1/2 cup vegetable oil
2 cups all-purpose flour
1/3 cup white sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/4 cup confectioners' sugar
DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Oil bottoms only of medium muffin tins.
2.Mix together cream cheese, 1/4 cup white sugar, lemon peel, vanilla, and 1 egg with an electric mixer. Set filling aside.
3.In a large bowl, mix together flour, 1/3 cup white sugar, baking powder, and salt until well blended. Beat remaining egg, and stir in milk and oil; pour into flour mixture, and stir until moistened. Fill muffin cups about 1/2 full. Spoon 1 teaspoon filling onto batter. Top with batter to 3/4 full.
4.Bake 30 to 35 minutes. Don't brown these; muffins should be light in color. Roll while still hot in sifted confectioners' sugar.

Gotta Start Somwhere

I made this for our friend Scott's birthday. He loves Oreo cookies, so I researched Pinterest and found some good looking cakes then tried to make the most simple one I could with the most Oreo cookies I could find.

Oreo Cookie Cake

1 box chocolate cake mix (because I was busy/rushed/lazy)
1 cookies and cream frosting
1 chocolate frosting
1 package of mini Oreo cookie bites
10 ish regular sized Oreo cookies
 step 1: bake cakes according to the box in 2 round cake tims
 step 2: once cooled flip one rounds cake upside down and put entire can of frosting in middle layer. Then layer the other round cake on top.
 step 3: frost only cake part with chocolate frosting then stick mini Oreo cookies all over top

simple...that's how I roll.
